Healthy Pumpkin Spice Syrup

Pumpkin season = the best season 🍂

Ingredients: 

1 1/2 cups hot water

1/2 cup dates

1/3 cup pumpkin puree

3 tsp pumpkin spice

1 tsp vanilla extract


Directions:

1. Combine dates and water in a saucepan, and bring to a boil. Then turn off the heat and let them soak for about 30 minutes. (If you are using a high-speed blender, you can skip this step if you want.)

2. Add everything into the blender and blend on high for about 1-2 minutes, or until very smooth.

3. Strain using a mesh strainer to remove any lumps or pieces from the dates. You will probably need to use a spoon to help the liquid pass through the strainer.

4. Now that you are left with smooth, pumpkin syrup, you can pour it into a jar and put it in the refrigerator.

5. Then you can pull this out to make the yummiest drinks, use it as a drizzle for pancakes, or even in a yogurt bowl!
