Lemon Crumb Loaf Recipe

Summer in every bite!

Ingredients:

1 cup granulated sugar

2 lemons (for zest and juice)

1/2 cup unsalted butter, melted 

2 large eggs

1 tsp vanilla extract 

1/3 cup whole milk

1/3 cup sour cream 

1 3/4 cup all-purpose flour (sub King Aurther 1:1 for gluten-free)

2 tsp baking powder

1/2 tsp salt

Crumb Topping-

1/4 cup butter, cold and cut in chunks

1/4 cup sugar

1/4 cup flour

1 TB lemon zest

Glaze- 

1 cup powdered sugar

2 TB lemon juice (you can always add more or less)


Directions:

1. Preheat the oven to 350 degrees and line a 9x5-inch loaf pan with parchment paper

2. Add the sugar and lemon zest to a bowl and use your fingers to rub the zest on the lemon into the sugar until it's fragrant and looks slightly wet. This step releases the lemon oils for maximum flavor

3. In separate bowls, mix together the wet and dry ingredients and add the sugar mixture to the dry ingredients. Slowly add the wet mixture to the dry and mix until well combined

4. Pour batter into the pre-prepared pan and sprinkle the crumb topping on top in an even layer

5. Place in the oven for about 55 minutes or until golden

6. Let it cool for about 20 minutes before slicing

7. Slice up your loaf and taste the sunshine!
